On the statement about topping off the "LOx until the last second" is not because of boil off but because of 'burn' off, at a propellant consumption rate of 30,000 lbs per SECOND the fuel also gets topped until the instant of lift off.It takes 7 seconds for all 5 F-1 engines to build up to full thrust called "Ignition Sequence" which is heard in every launch, the engines are ignited in sequence not all at once.
