Usually, if you can dislocate your shoulder like that you probably have a connective tissue (collagen) disorder called Ehlers-Danlos Syndrome (EDS). So, please check out what EDS actually is and you will find that this is why most of these so called tricks (like stretching their skin more than what is normal and doing these double jointed tricks where you can dislocate at will) can be done.

A very good demonstration of shoulder hyper mobility where the person has done lots of practice dislocations - many contortionists can do this.
