The egg was cooked too long and you don't have to flip it. Instead, you should take the egg out before it is fully cooked, that way you can retain the fluffy texture of the egg and also the taste of the egg can go into the rice. Moreover, since the egg will be half cooked the egg sauce will mix w/ the rice make it yellowish.
Very good that you checked the temperature first coz it's important in Chinese cooking
