Its the type of wood you are burning we had the same problem with ours. Now we only burn Oak thats been air died for 2 years, but we always have the door closed as we run our central heating and domestic hot water from it. Workes well and cheaper than other fuels.
Its a very small abundance of oxygen in the air, as in the air has a slightly higher oxygen content than normal. This is NOT dangerous at these levels. It only happens with cured/green woods is because those woods have a greater amount of oxygen than dead wood. Cool as hell though.
Well the only time I really see sparks do that in mid air is when I'm using a Bunsen Burner and any escaped gas combusts when I light something near it creating those many sparks... I don't know what it would be in this case sorry. Maybe small pieces of ash are rising and combusting due to meeting the heat rising from the oven? I honestly don't know.
my guess is that it to do with the type of wood and the the temp difference. it look awesome i have seen similar but it was a camp fire it was really cold and we where burning pine. but it wasn't this impressive.

yea there are little air pockets in the wood so they randomly explode at times
