When you buy tickets, there are machines working in both Chinese and English. All station names are bilingual too, although most station names are romanization of Chinese road names or town names.
My point of view is that Shanghai and Beijing's subway are not that complicated as Tokyo's or Osaka's. Most of you can easily find the way, you don't need to worry about it.
