They aren't going for rank, they are going for all out SPEED. So destroying said enemies would be completely redundant and would fuck their end chapter time up.

You missed the point, even planting mines takes TIME. Even the smallest things add up. They can't afford to be doing things like that when it isn't essential, on a speed run you only kill when there is no other way.

Turning around with the rocket launcher to mess their day up did fine. You only need over six kills to nail that S for kills. Speed run is NOT an S run. You just do it in a short as hell time. An S rank run would actually probably be much different.
