What is the second last ingredient, the one before the oil for frying? A pinch of what? Someone please help. I can't catch it and it's bothering me :)

Or you could blanch the spinach (have some boiling water, immerse the spinach in the water for up to five seconds, then remove. And then you can use your spinach water to prepare the paratha dough. :) I haven't tried it yet, but I think I'll do just that :)

mm actually the tastiest spinach paratha ive ever had is quiet simple..you cook spinach with some spices ( red chilli or green) add salt and its best to cook it with chunks of potatoes..then you mash the potatoes and spinach..and make paratha with it

Greeting! I notice that when you mix by hand, you never have dough on your fingers. HOw do you accomplish that? Do you start off with your hands oiled?
PS: I made your naan recipe and it didn't fluff up all the way like yours, it was more like flatbread, but it was so good, thank you so much for your time.
when i make rotis i don't oil my hands...just make a well and add water little by little...don't put all of the water in at once. Once you have combined the water and flour keep adding more water till you get the right consistency then when you are almost done put some oil on the dough and knead again, any flour stuck on your hands will come off. i hope this helps. :)

Yay Manjula is back. Could you possibly show us how to make mushroom masala? My local indian restaurant serves it and it's my favorite. Lots of indian restraunts don't carry it though.

I find aashirwad atta to be very good. please try it. it also depends on how well you have knead the dough.
