first time making bread... i know i can do better, but this is probably the easiest video in terms of making bread. I will try some more times... maybe next time with less baking time... i cut all the ingredients in half but forgot to cut the baking time too. oops :)

Yes, you can use oil - it makes more of an Itallian ciabatta bread with oil (still tastes great though). I would recommend using coconut oil. It cooks great, and retains all of it's nutrients at high temperatures. Avocado and Extra Virgin Olive would also work well.
can you use olive oil? i do not care for the vegan spreads, they scare me like margerine. if you can use olive oil, which do you recomend.... unfiltered, extra virgin....? or would avacado oil be better?

Okay, I just finished making this bread and I am eating a slice right now with a little soy garden butter and some apricot spread, it is wonderful! gonna have to make it a lot for sandwiches and stuff. Oh, and I used one large loaf pan instead of two small ones. Thank you!!!

wouldnt butter(dairy) make this not vegan?

In deed it would, however, there is no butter in this receipe. Earth Balance is a Vegan non-dairy spread.
