a tip if u want and have the time. boil chicken. save grease, (boil off water) homogenize maybe with a cream, or a fat, mix with oil, then deep fry? breading should catch, for health use doughnut batter, boiling chicken with ingrdiants found in doughnuts should deep fry perfectly. i came to watch ur greens recipe
I stumbled on your show by accident, now its all I watch. I have been cooking for 41 yrs. Cleanliness is very important to me. I look at how cooks treat their food. How clean the kicthen is and I look at the background. If your kitchen looks nasty. I have no interest. You are a fantastic cook and your kitchen gets an A+. I did order Grand Diamond and I can not wait to try it. You inspire me. Much continued success to you.
@chriscook4u2 Wow thanks so much that means a lot to me. A part of my "day job" is to check the sanitation conditions of the food service establishments that are under my charge. So that falls over into what I do here with my episodes. Thanks again!
Sauteed turnip greens?.....Mmmmm now that's what I call upscale soul food...and it beats spinach....except when it comes to making lasanga, then you gotta go with the spinach.
@QuietStormMan Great! But promise me you'll try the turnip greens because the texture of the cooked greens is virtually the same and it allows you step out of your "taste comfort zone" :) Just try it by making half of the recipe and see what you think.
@NewarkBrickCity1970 Buttermilk is acidic and helps keep the chicken moist and tender. You can soak it anywhere from 2 or 3 hours to over night. It's quite common in southern cooking :)
@CookingWithCarolyn Thanx, it's so refreshing to see a nice person with helpful videos on a website that's 90% political vitriol and other mean-spirited inuendo.
What does it TAKE to be able to taste some of your cooking??? LOL! Good Lord...I feel like such a fatty when I watch your vids because I get SO HUNGRY lol! Even AFTER dinner! Whew..onto part 2.
@Shyloh8 lol, that is sooo funny you should say that>.i just got finished eating enchiladas, quacamole rice and a regular coke, and I still want some chicken and greens..lol...Caroyln is good like that..lol
I know that's right honey, aint nothing wrong with a lil fried chicken every now and then!! I just love watching your videos Carolyn. I could so see you on the food network. Oh and tell your camera person they rock!!!

What does the buttermilk do for the wings, and how long do you let them soak in it?
