You run a cafe using a silvia? That's for home use. It would be worth it to purchase an actual commercial espresso which can handle volume and doesn't make you wait every time you try to do something.
Plus you care so much to set a timer while extracting but then you just leave the shot sitting around forever while you steam the milk.
It looks so easy, but is so difficult to get the right microfoam. Well done. You have inspired me. I use Nuova Simonelli Oscar machine.

You should never let the espresso sit so long before adding the milk. At that time, your espresso is too old to use.
