It stands for Tech Points. They're used for Artes/Techs, like Azure Edge, yes. It used to match up with the name until Abyss, when they changed it from 'Techs' to 'Artes'.

You don't seem to get Grade when you play on Easy Mode. Apart from the fact that the enemies seem like a joke to fight, are there any other differences? Like, is it only a Grade/enemy difference between difficulties, like the other Tales games?

Basically, yeah. If I wanted to grind for grades, turn the difficulty up and find some low level enemies.
