some people add salt or even dried meat in it use it for soup starter
another version of ayran is made in villages and found rare because not sold -usually they make ayran to produce butter from it so they ,shake it veeery long time so butter comes on surface and they take this butter ,rest of liquid is ayran
@gkidcj That is a common exam question in Turkish schools :), biology teacher told us that lactic acid is generated in human muscle when you get tired, it is a result of non-aerobic respiration that happens when blood flow is not enough to provide enough oxygen. Traditional yogurt also have lactic acid in it as a result of unaerobic yogurt culture, when you drink it, it makes you feel sleepy for a brief time(few minutes). Lactic acid is the reason of sour taste.
I just wanted to ask what do you do if you want to ferment it to give it bubbles (sparkling). I'm not sure do I need to pasteurise it, somehow, if I leave it for 2 days at room temperature to do so, . Any suggestions are welcome. Cheers!
@baharat82 I have never fermented the tahn. It's interesting to know how, and if it's safe and healthy. I sometimes mix yogurt with carbonated water like club soda or mineral wate instead of waterr. Try it you might like it.
@baharat82 best result if you want more fermented and sour ayran you need to use homemade or let me say "real yogurt" because most yogurts are not real yoğurt these days ,they are sweet like puding and dont get sour in time because of additives ..they wont make good ayran..
i found only one yogurt -a local brand not sold widespread -its Balkan yogurt made in in Torbalı or Uludağ in Menemen ..Local brands and/ dairy producing sheepfarmers

Buy Nancy's Yogurt, whisk it with some sparking mineral water and add some seasalt.. mix it

lady, just put all the yogurt and water and etc in a bottle and shake the bottle, it's quicker, there no secret to it, and it comes out smoos ;-)
