@monsay71 She doesn't NEED to give measurements. The amount you use depends on how much whipped cream you are going to need. The amount of heavy cream you start out with will almost double when you reach the right consistency. Making whipped cream is pretty much trial and error, once you get the hang of it you're good to go. Using a metal mixing bowl is best, and chilling the bowl for an hour or so works better.
@monsay71 Also, you could place the bowl of cream in a separate bowl filled with ice. It helps to keep the cream cold to keep it from becoming runny. The amount of sugar and/or vanilla you need depends on how sweet you want your whipped cream to be. Per every 1 cup of heavy cream I like to add 1 tablespoon of sugar and maybe 1/8 teaspoon vanilla. Again, it depends on how you like it. I hope this helps :)

i'm in culinary school & actually its best if you use a whisk because with a mixer you might whip it too much and it'll turn to a sort of cream cheese stage or butter. when whipping as you see it get thicker, lightly scoop up with the wisk to make a cone peak at the tip, if the tip flops over you need a little more whipping if it stays still and straight then it's ready, but be careful when placing it on the cake because you could accidently over whip it and it'll break down to a different stage
it's just milk manufactured differently, you can find it at your albertsons or vons etc. it's called heavy whipping cream. ask the people who work there they'll help you out on that.

The cream needs a certain level of butterfat for it to thicken and whip. I think its a minimum 45%, but I'm not that certain. An expert may clarify.
