I love this idea! I used what I had ~ I have lots of spagetti squash from our garden; used ground chicken, red peppers, onions, mushrooms, lots of garlic & barley , S&P. It was great! Even our toddler ate it!

Looks yummy I'll have to come up with a vegetarian stuffing so I can try it. I like the turkey stuffing that is common around here made with potato , bread, onion and sage maybe I'll try that.

Too bad there isnt a Potato as large a that squash looked awesome though. I got inspired and Came up with an Idea about cabbage stuffed with Meat loaf and flavored with beefy onion Mix from the lipton soup packets. Or could use mushroom soup flavor as well.
