The dodging and combos is actually quite easy. First you have to duck an attackers swing, by pressing X on PS3/ A on Xbox 360, then to do the combos, after ducking, press either Circle, Triangle, Square or X on PS3, or Y,B,A,X on Xbox, and one of the arrow keys at the same time.

You can also look up GTA IV Fighting Combos on youtube for a better explanation.
