I made this and it was fantastic! I did add finely sliced green onions into the egg mix. It gave it a really nice touch.

Beginner? Not at all. I happen to know Jin well, and he is extremely talented and has many many years of experience. Jin is the executive chef of a VERY highly-awarded Japanese restaurant, and knows what he is doing.
