I always just take as much land as possible and try to find a camp or castle close to their base that will keep my starting castle out of harms way. Then SECRETLY create a force of trolls and mumikill to take the enemy by suprise and get into their castle. Its very likely that they will have strong defenses so its best to back them up with some catapults and a reserve of infantry units. Or just save up for the Balrog =D
