It's synthetic in no way whatsoever. It's just a type of fermented milk. When I was in the army it was always special when we sometimes got viili at breakfast :)

I used to make plain Viili at home. It was fantastic way better than yogurt. The problem was is it would culture too fast.  It would be done in 24 hours and I would have to start another culture. I was simply running out of milk trying to keep my starter alive. Mine was more like custard though. Store brand stuff is always inferior to the homemade stuff.
