thanks for the compliments! For the malbec, the oak "dust" was added with the original juice during primary fermentation; unfortunately, no raisins for the malbec. For the amarone, the oak chips were added in the carboy for secondary fermentation; the raisins were added in the primary right after fermentation began "rolling".

Well done. I am so glad you saved the 1/2 gallon of left over. I would have used old panty hose instead of cheese cloth for added flavor :-)
