So what weapons are available underwater? I can't imagine it with a lance or bow. Did the game also has an oxygen or a breather for diving?

bows being droped. along with the hunting horn and gunlance. all the rest and new weapons can be used

No they aren't, Tachi (long sword) has been confirmed.

Bows, Hunting Horns, Gunlances and Dual Swords haven't.

the stamina bar becomes your oxygen gauge and you need to surface for air

From look of it the stamina stays stamina unlike that guy said, as I clearly see a bar on the left side that fills up as soon as Moises dives underwater.

Logic suggests that's the oxygen bar.

no it doesn't, a new blue bar at the top left is your oxygen level

and you can also swim over little bubbles instead of surfacing.

In the demo do you create a character and then select equipment or do you pick a character with pre-equipped gear?

Its Premade characters. For Sword, Great Sword, Hammer, And Bowgun I believe. In both a male and Female version that have different armors and weapons equipped.
