  • you should use, equal parts of lime juice and fish sauce with palm sugar and honey to taste and thai chilis and fresh garlic and or shallot

  • I am yet to try that recipe but it sure looks good!

  • Thanks! I was attempting to come up with a twist to this using peanuts only as peanut butter incorporated into a noodle which you then boil, cool and dress with your dressing. I add scallions, cilantro, minced red pepper(bell), thai chilies, sliced radish and cucumber. Oh yes and garlic! I love your recipe, Thank you!

  • Personally, I'm not a big fan of raw garlic. I did try it with cloves but didn't care for it, so it's up to you. I also don't like most brands of garlic powder, so you're on your own 'til I get there ;-)

  • Looks yummy! Not too long at all. I *attempt* to do short cooking and gardening vids but it just never seems to work out. If it didn't speed up segments of them they'd wind up 30 minutes long, LOL. I'm guessing that tomato was from a farmer's market and not a grocery store? It looked a little too good to come from a store.

  • Gary, Twish1999 caught me on the cilantro and spring onions, too. Here, dried cilantro is usually called corriander. Your spring onions are called scallions or green onions here.

  • MMMMM I love Thai Salad! So refreshing and such distinct flavors. YOURS is making my mouth water and of course there is nowhere to get it at this hour! (not even the ingredients!) Yummy Yummy! Pad Thai next!

  • Yikes! Pad Thai. I only make the Thai fast food version of it because some of the ingredients are bit hard to find around here (such as banana flowers). I've also never made the sauce from scratch but this might be worth the effort.

  • I have never attempted it either. There were such good Thai restaurants in Dallas it was just so easy to get in the car. Now that I am not in the Dallas area, we have two Thai restaurants, and unfortunately neither are anything to rave about. Ya know how SOME Thai restaurants make Thai Mush? Yep, that is what we have. No fresh, distinct, colorful, awesome food.I miss it, so I need to get it figured out as far as recipes and ingredients. Thai rocks!

  • Yeap. If it's mush, they've added too much water, probably. It can be basic and still very good if the sauce is right.

    The end result looks and sounds like yumminess. Love what you did to the tomatoes. :-)

  • My son the cook...showed me how to dice without cutting tips of fingers off...you place your fingers down as if they are ballerinas on their toes upon your onion or whatever etc, and then slide the knife down along the edges fo your straight fingers which you move backwards as you cut...Delicious sounding recipe by the way...will try it...

    I learned dicing and slicing from Graham Kerr. You modify the ballerina technique, curling your fingertips in slightly while you rest the side of the blade against your knuckles. You'll never even nick a fingernail. Just don't get carried away and raise the blade up too high, or you'll cut your knuckles off. :-P

  • I was going to say that i can't make this as i don't know what scallions are or what Cilantro is.... then i googled them.... scallions are SPRING ONIONS! and Cilantro is CORIANDER!

    so of couse i can make this!

    But you take the seeds out of the cucumber? peel it too?

  • Twish, we also call them green onions. I've only seen "coriander" used to refer to dried cilantro, here.

  • I love this salad because it has some of my favorite ingredients I always have on hand, like cilantro, cucumbers, peanuts and lime. Great combination of all ingredients, well done!

  • This was the first time I used lime and, even though it's more authentic, I prefer all vinegar or vinegar and lemon juice.

  • lime and cilantro are southwestern cooking staples, so I had no idea they were more authentic for this dish!

    Reminds me to make a cucumber salad this afternoon Arizona style!

  • No, Jim, I don't think it's worth it. The peanuts give it an added texture that is great but if you can't eat them, don't bother.
