  • I make a wonderfull chicken and rice soup, by boileing a hole chicken in store baught broth to make it taste homemde, then after i strain my broth, i pick the chicken and add celery, onion, and carrots along with the picked chicken, then i cook a box of uncle ben's chicken flavored rice mix let it cook, and serve it with some warm french bread. Wonderfull recipe :)

  • I like to cool the broth in the fridge so the Refrigerate over night so the fat comes to the top and i can remove it the next day before adding the chicken back to it.

    Enjoy.

  • It's best to add more water to the broth that is left from the simmering (add more along if it cooks down too far) . Season with salt and pepper and even some poultry seasoning if you like that taste. It is sage, rosemary and other herbs. I like a yellow onion cut up and cooked along with the broth too. Garlic is good. It really doesn't matter but be sure to take a taste as you go along. Then you'll know when it tastes good.

  • You can add broth later if you like but it shouldn't be needed as it will be rich after cooking at long. I let it cool after scooping out the bones and meat and even straining the broth.

    Then i pick the bones clean and place in a separate bowl until I'm ready to use. Ron likes all the junk that comes off the carcass so i prefer to do that work!! He sucks on the bones and picks the cartilege out when eating... ugh!

  • All of our recipes are pretty flexible. The longer you simmer the carcass for at least an hour to soften the meat so it's easy to remove. Be sure there is enough liquid (water) to keep it covered.

  • How long do you simmer the carcus for? Also do you add any broth to the soup or just water? Thanks :)

  • I am new to this food, Can you make a shorter tutorial video on how to make the "typical" chicken soup served at several hotels. From what i can remember it was simple and plain, All i tasted in it was unique soaked taste of chicken, physically i didn't spot nor taste vegetables or any spices Looked Whitish tan, maybe it has eggs in it but not sure.

  • If it was clear chicken broth then it was a cooked chicken and strained... then let sit in fridge overnight and scoop all the fat from the top. Also during cooking continually spoon off any froth or 'stuff' that rises to the top. Salt and pepper is enough.

  • What a wonderful video. I think you are doing such a service showing how to make a soup that most of us "oldies" grew up on! Using a rotisserie chicken is brilliant! My kids are aged from 34 down to 11 (plus 5 grandkids) and all of them love good home cooked chicken soup. Keep the videos coming~!

  • Wow I really enjoyed watching this! I just have to say..my grandma made some homemade chicken noodle soup and you reminded me of her ha!   • I love the show and love everyone on it your great people. Its a nice weekly family show to watch . However be it Roloffs or any/every person in spotlight there are some who are full of hate and look to put everyone down . Dont pay attention to negative comments if you ever get them and delete them. People can be very mean. I did like the rooster/chicken coop would like to see that again. Thanks

    Perhaps Dudley and his girls will be on in a future show. He is still alive and happy.

  • Your right best to avoid those folks. Thank you for letting me know about the rooster/chickens. I live in Florida with my wife and 2 daughters. Though its our house its not a farm and thus the zoning law does not allow chickens. I love the show but the Rooster/Chickens was great as to me no farm is complete without them lol. I hope to one day have a small farm just to have several chickens to get fresh eggs . Thanks again best to you and your loved ones.

  • What gave you the idea to post these videos on youtube, i think it's a very good idea actually the soup looks very good. I have a quick question (Doesn't have to do with cooking if you don't want to answer don't and if you don't like it i'm sorry) but the question is Matts helper/assistant Mike is he still alive? i've heard reports of him that he's passed away and i don't know i it's true or not, but if you could respond to me thank you take care :)

  • our dear friend Mike passed away last June. We are all saddened by our loss. He is remembered fondly by all who knew him.

  • Wouldn't that be fun!!! We have been choosing family food that is easy to prepare, doesn't cost much and is healthy. When we were raising our four children i didn't have the help of my lovely sou chef Ron. Still we ate well and all of my boys, and daughter learned how to prepare fresh veggies and other meals. It's important... matt's hamburgers are his own concoction but the mustard is my favorite! Ron is a mayonaise guy.
