When I thought it had a good colour I moved it over to the indirect side of the weber for around 15 to 20 min. I then let it rest for 15 min. in tin(alu)foil on top of some newspapers. My guests liked meat well-done and this was pretty well done but not dry or grey in colour.
This is butterfly cut (meat opens up like butterfly wings, joined at the middle) - deboning gives this result anyway. So if you buy a supermarket leg of lamb deboned, just cut the strings, open it out, and give it a bashing to make it flat. You might find a lump - the topside - but that's just a rolled up layer you can slice so it unrolls to an even flatness - he does that in the vid.
Just wanted to say they I did get around to making this last summer and I can say this as good as it looks in the video. It doesn't take too long to prep and its really pretty quick to cook on a nice hot BBQ. Will be making this again this summer without a shadow of a doubt.

I made it yesterday - fantastic. Looks a bit difficult to cut but once you get started it's quiet easy. Looks so good on BBQ the taste was perfect.
