I really like to watch your video. Am Moroccan myself ( born in Holland)so i regonize a lot. You really cook the Moroccan way. But am confused by 'culantro' . What is the Moroccan word for that? I thougt it was 9azbour or coriander. By i have googled it and it is something diffirent.

Eid Mubarak. Thanks for the video. I have just started cooking in my tagine. How should this recipe be altered if cooking in a tagine? Would you add this much water?
first, make sure that you are cooking the tajine on very low heat if you are using the stove. Also, that your tajine is completely brown and made of mud, if it has painting it may contain lead. As of the water, you may not need that much - so add around 1 cup of water until the meat is cooked, then add the vegetables, and some water if needed, until done. always make sure that there is enough water in the tajine for the meat to cook and to have some sauce at the end. hope this helps!
I use my tagine on low heat on my electrice stove with a heat diffuser. It has been working ok so far. I find that I can cook with very little water. I tried your Kefta mkaouara recipe and it was very tasty. شكراً
