You are completely correct combatives, these are just simply drills and principles to perfect timing, sensitivity and precision! Knife to knife sparring or fighting is completely different! If we're talking about actual combat you have to take into account multiple weapons, multiple attackers, the environment, the site of blood and the reality of pain from being cut, because you will get cut!!!
I mean no disrespect but these may be "perfectioning drills" but to see most of this stuff pulled off in real time against a live uncooperative opponent is less likely than you may want to assume.
