@charronfamilyconnect in this case yes, as there is debris from the fire and such that needs to come out. But, if all you were worried about was sugar sand or nitre as it's called, filtering is not required. It adds to the look of the syrup, clarity, and it also reduces bitterness that some claim is associated with nitre. I have not noticed the nitre being bitter myself, it is mainly malic and tartaric acid if I recall correctly.
@charronfamilyconnect No, it will drop below boiling immediately upon removal from heat. For proper sealing and safety the syrup needs to be bottled at 180 F or higher. It is a potentially dangerous process as the syrup is very hot and would burn you severely if it spilled. Also, bottles and jars can break.

The guy who sold me the BOTTLES used in the vid said new BOTTLES do not need presterilization, you should have them at room temp prior to bottling to help avoid breakage. New or used JARS and lids should be heated/ boiled in a hot water bath prior to use. I'm not sure why there's a difference between JARS and BOTTLES, but there is. I verified this with folks who hobby produce and produce for profit, and my syrup is still mold free, so I believe the info is good.
May I ask what type of filter that is? I can't seem to get all the sand out of my syrup and it's a bit discouraging. I could leave it but it's not a proper job.
@MiWilderness Guess we have to turn pro! Still making some pretty awesome stuff though - way better than the commercial stuff. My brother used to work with a cabinet maker who had a sign over his bench that read
"Perfect is close nough" - then he had a major heart attack and changed the sign to "Close enough is perfect".
Do you really have to filter the syrup? Is that really necessary? Just curious? Thanks!

Do you pour the syrup in the bottles when it is at boiling temperature?

@promotah17 it's an 18" flat filter with 4 pre-filters. But, it doesn't get all the sugar sand out all the time.
