Just so you know, Cheese is about 2/3 fat, 1/3 protein, so unless you're using some sort of "soy cheese" you are actually using fatty ingredients. You did mention that the cheese was vegan, which would make it not cheese.

It depends on the source of the rennet used to coagulate the milk. In normal cheese production the rennet comes from processed calf stomach, which is why it's not strictly vegetarian. There are several non-animal alternatives, Wikipedia has a quick rundown if you look up 'rennet'.
