I never understood the point of kicks. They don't do much damage, and in this game you could down someone quicker and for a longer amount of time by shooting them once in the legs/feet.

Kiritsugu was a real mage, he's fully capable of magic, he just choose not to, usually relying on more normal methods involving guns, grenades, mines, explosives and sniping to fight (something that really annoyed Saber who preferred a more chivalrous approach), which earned him a reputation of no respect for magic and the title "Magus Killer". He does also use magic sometimes with this approach, but mostly he was a tactics fighter who used modern armaments rather than magic.
Since she can't dematerialize, Irisviel has to find clothes for them. Seeing as Irisviel comes from the Eizbern, a rich family, her taste for clothes is... special. And since Saber looks like a young bloke, they give her those clothes so they look like a tourist couple and blend in more easily
