I haven't read all the comments so I don't know if anyone else has mentioned this. I bought some clear vinyl hose 1/2" o.d. X 3/8" i.d. I then went by my local auto parts store and bought a straight PCV valve. The small end fit perfectly into the 3/8" i.d. hose. It works the same way as the one Craig is using. All total was about $4.00. It's basically a one way check valve. Works great.

I think you should do a wine with concentrated juice. There is some videos I saw here on youtube but you are much better explaining everything than others on the web.

i am in the process of making my grape wine...heard about this process..i made mine in a 5 gal glass bottle..used a balloon..now in afterthought i am searching how to do it..my first balloon burst..now in it's 10th day..it sure smells good...thinking i will need to siphon into plastic jug to freeze..do you think that will be ok?
If you freeze it, after siphoning the wine, how long can you store it? Can it be put into glass bottles and sealed and put in a wine cellar? Does it get better with time? And thank you so much for sharing these videos. It's a nice skill to learn, and it would be awesome to give a bottle of my own brew as gifts for holidays and special occasions :-D (Now if I can just learn how to make mozzarella right... lol)
@TricityX I honestly don't know how long it will keep for. Home brew wine kits come with some additives to preserve the wine. None of these were added to this. If you freeze it (not in glass bottles) it will last until you thaw it out. I've had some in the fridge for over a week not, opened repeatedly, and it's still fine. After I froze it and thawed it, I added a can of frozen concentrated grape juice. Pretty damn good I must say.
@dqnizer I keep mine up in my son's bedroom where he has an Xbox and a computer running all the time. The room is nice and toasty. He also knows not to touch it, so no worries. :)
@CraigTube thats what i am doing right now with my 2 bottlles of formenting cranberry juice but im using a ps3 its going mad! lol its the second day, and im going to put it into another container and wash the other one out and then put it back into the origional container, i also heard it gets better with age and lasts a while as long as the alcohol is strong enough like the alcohol preserves it well
I found it on Amazon. It is called the "Super Siphon". The biggest complaint review seemed to have was getting the thing to go down inside of a gas tank. Or it fell off inside of a gas tank.

@tiwfdt It's a glass ball on a spring inside of a copper enclosure. There is a glass ball with a spring above it. When you do a down stroke, it lifts the ball and lets fluid into the hose. When you do an up stroke, the ball falls down and seals the opening. It works like a pump. The shaking lets fluid in but doesn't let any out. The hose fills up and the siphon starts.

You could strain it through a coffie filter to be sure you filter it all than freeze it.
If you want to clear it further rack it a few times over the course of 4 weeks rack it once per week after freezing. Racking is nothing more then transfering bottle to bottle. I would suggest glass bottles.

If you freeze your wine, make sure there is enough headroom to accommodate the expansion of your liquids. My apple juice froze and rose to the top of the container. The alcohol, which doesn't freeze, erupted from the lid like lava from a volcano. It smelled quite strong but I did lose some to the freezer. I believed it had adequate headroom, so just watch it.

hey Craig, so the inmate wine is a brewing using a method close to what you did with the bunghole and the air lock but I decided to boil it for 10 minutes first with the clarifying agent in it and then I resanitized the plastic jug and put i in there, i also used dry coopers yeast for simplicity sake and I gotta say the fermentation has taken off very quickly. There is already a nice layer of foam at the the top. If you'd like I can take a couple pictures too. Thanks Craig.

That sounds like a good thing to try. Certainly won't hurt anything. The standard additive for clarifying is potassium sorbate. that's what's in those tablets you can get. I believe they're called campton tablets.

I make something similar to what you made, its called turbo cider, you make it from pure apple juice, ferment in a demijohn for about a week, bottle with sugar for carbonation and leave for about a week, tastes really nice. You should give it a try. You can also add some canned peaches for extra flavor, also add one cup of strong tea to add tannin.

As long as the juice has no preservatives, it should work. Use raisins for yeast nutrient, or get some yeast nutrient from a home brew place.

stick it in the fridge and crack the lid every once in a while to let out gas and eventually the cooler temps will kill the yeast without freezing

Yup, I had no trouble with just chilling it. Fermentation was done anyway, and chilling it stopped everything completely.

Just doing it the way I did it, I got about 6 or 7%. If you want more, you add about 1 kg of sugar at the beginning. That could bring it up to 12%

If you boil the wine, you're gonna lose all your alcohol. I'm not sure about the Irish moss. Never heard of it.

i ment before adding the yeast, and irish moss is a clarifyer that they use in beer homebrew. Also clarifying tablets that you can get that I use.
