Hate to break it to the people hiding behind Brawl, Brawl doesn't prove shit. It's more non canon than the manga, which was supervised by the individuals that made OoT. Also, who gives a fuck what gender Sheik is? Really? It's not that important - Sheik is an awesome character. I personally lean towards Sheik being male due to he is referred as 'he' in Japanese interviews about OoT and Ruto calls him a young man. Sheik's gender isn't a huge part of the role Sheik plays in the game.

The manga is wrong, at least in terms of being canon. The game is always canon. This applies to all LoZ games. That said, the mangas have good stories in their own right but their plots are not "official".
