What do you thing about Blue cheese with molds.It's an art of cooking it and been doin it for years and in Asia. The reverse is eating raw fish,ceviche by putitng lemon...happy cooking and Merry Christmas.

@chefsabor ITraditionally in the Philippines they used cleaver cutting it on cutting board.I used strong big scissors instead,cutting straight from back top butt to shoulder,straight down to belly,2 inches apart then I cut across to have square cut including the meat, then I do the other side,once done cut meat is in between.
Just type ..how to cut lechon..I saw 2 youtube videos..good luck..
