I've never heard it done with a men's choir before. My school's vocal ensemble did this with a fairly balanced class of both men and women. It was absolutely beautiful.
As far as spirituals are concerned, this is a work song and the tempo determines the tempo of the slaves' work. So it makes sense to have a faster tempo. But perhaps the tempo could be a tad slower just for diction sake.
Indeed check out the guys from Morehouse. The Morehouse Glee Club guys did this song and they were awesome.
