I just tried the sandwich but as the base i used the nut cheeze recipe below to hold it all together and lemme tell u YUM! the recipe for the nut cheeze is below (works better if u soak the nuts overnight, and i used a macadamia/cashew mix) then added the bok, tomatoes, pine nutz, and onion! Im gonna make one more so i can make sure i did it right! LOL

What does the coconut oil do? help bind, or just flavor it more or help soften the nori wrap? just wondering as i've never had coconut oil before. it looks good though :)
figsandolives - Well I think it was to bind and soften but it did more binding than softening of the nori. It kept the ingredients in better than making the nori pliable. I'll probably use water next time.
