  • As far as everyone saying 'I can carve a chicken in this much time', thats not the point of the video. He's demonstrating for the average 'Joe' and 'Jane', aka the home cook or aspiring chefs the correct technique for carving a chicken. Give the colonel some slack.

  • seriously, i can do that without a fork a still retain more meat on the breast than this guy. somtimes a carving knife is usefull. but with my 8 inch chefs knife i find its allot easier. and the fork really? ive never used one.

  • OK, if you like your chicken stone cold, and as others before me have said "what about the wishbone?"

  • To clarify- I'm talking about the big chunk of meat that is attached to the wishbone. If not removed prior to carving then the meat stays on the body of the chicken and does not come off as part of the breast when removing.

  • Master, I stumbled upon your site and saw the video. I hope it doesn't bother you that I pointed the wishbone out. As you know, if not removed, it will attach itself to the body of the chicken and not come off when you are removing breast.

    Please know that I like your videos and channel. My comment is not meant to be snarky, simply an observation. Keep on truckin!

  • i think it's great that you put these videos up! now after seeing them, i am determined to grab myself a copy of the book as soon as $ provides, but most of all i can't wait to see the entire dvd! (i didn't even know about its existence until now.)

    love the instructor! i'd want to be in his classes. style and technique and overall presence makes me feel inspired! <3

    i had to do , table service , cutting chickens , fish and other ,baby pig ,,,,

    it is difficult , doing it table side i was hanging with a friend who cooked on a charter boat.i was cutting shashimi right out of the water ,mm wasabi and real nice soy sauce, so fresh, oh yea and capers

    we made some seaweed tomato salad with noodles(rice)
