If you make the tacos again I would highly suggest blanching the tongue until the outer layer loosens, remove the membrane, then braise in a beef stock with dried peppers, cumin, etc. As a Chef cooking is my passion and some of my best memories come from cooking with my girlfriend. I think our problem back then was really just using too much water, so now instead of following a recipe's amounts we just do it by the feel of the dough.
I usually boil the tongue alone for about 25-30 minutes, to the point where I can remove the skin and once that's done then I add the condiments, such as onion, garlic, bayleaves, seasalt and continue cooking it for about 1 hr on low heat on a container with a cover and about a cup of water. During the first boil, I make sure the tongue is covered with water....love cow tongue
what about a corona with the tacos?....hummmm they look good .....how did you cook the tongue?....did you just boil it for a long time or did you cook it in a pressure cooker?

I recently had Gyutan aka Japanese style grilled cow tongue at Uchiko in Austin last weekend. It totally changed my perspective on tongue. I love the taco wagon style tongue tacos but the japanese version is over the top and incredible. Next time you are in Austin give it a shot. I'm trying to reverse engineer what they did.

I am a teacher and I mentioned tongue in class once- 1/2 the students nearly threw up! I grew up eating all sorts of different stuff bc my dad was raised on a farm. So far I have eaten fried cows blood, pork kidney, beef heart, lamb, snake, head cheese, goat, blood sausage, rabbit, eel, deer, game birds, pheasant, duck, etc.
I ate mine raw. The 100% grass fed tongue I bought was not BLACK! I believe corn feeding beef largely effects the meat quality. The bolus at the base of the tongue was tender and delicious, but the actual tongue part was way too tough to chew, raw. Perhaps next time I'll try skinning it. The heart I ate was far tastier, but again, corn-fed beef heart does not come close.

My kids love it. I cook it with green onion, cilantro, a green chili, a dried red chile, a leaf of celery, garlic and salt. All this gives the toung an excellent flavor

I tried my first ever pig tongue. It was great! I got over my fear of cooking it watching this video.
Pig tongue is much smaller than cow tongue and less intimidating.
