the meat in "kheli'" actually is not rotten , it's more like beef jerky in this case is lamb jerky preserved in it's own fat (when people didn't have fridges they used this technique to store meat) this guy makes it sound like he's scavenging on some carcass ! he exaggerates sometimes ! this dish is so good it'll make your teeth sweat !

khlii tastes different from city to city. i only like our home's khlii and city of FES's khlii wich is the best one in morocco.

the key of khlii are the spices that we mix with it, not the meat.

I tasted one that i bought from a supermarket, and it was horrible.

Khlii is basically cooked/salted meat preserved in fat just like duck confit, it definitely needs to be well sealed and stored in a cool place..my favorite way to eat it has to be with eggs, a bit of fresh tomato sauce and a nice sweet cup of mint tea ..good eats.

..and I can't believe this guy didn't like it, knowing that he had eaten all kind of testicles even bird saliva and didn't complain.

actually some of the best tasting steaks are aged before cooking. Look into it. Its quite the opposite of what one would think. Obviously it cant age too long but some of the best chefs age their meat, sometimes days, before cooking.
