  • The only healthy thing in this entire episode is the 2 quarts of water used to cook the cake. Really, does the mound of cream cheese, heavy cream, butter and egg yolks really need whipped cream on top? xD

  • @NeenerBee If you are a dedicated Good Eats fan, you would also know that each oven, indeed, each KITCHEN, is different due to differences in elevation and oven's heat output. While AB's instructions are generally good, they should act more as guidelines, especially when it comes to cooking. At best, you should apply a thermometer to get an internal temperature reading to know whether it is done or not.

  • I tried this recipe and it's delicious albeit a couple of warnings:

    - don't beat it too fast: I ended up with lots of tiny bubbles in the filling

    - I think there's too much sugar (my taste), and cream, my filling was much thinner than Alton's

    - my oven is weird and 250 F wasn't quite enough. Next time I'll try a higher temp or longer baking time

  • @karinandino1993 There are savory cheesecakes with smoked salmon, smoked trout, etc in it. Many fruits could work too :)

  • Recipe (taken from Part 1 for those of you asking for it): CRUST- 33 graham cracker squares (crushed) 1 stick (1/2 cup) unsalted butter 1 tbs sugar FILLING- (in order of incorporation) 1 1/4 cup sour cream 2 1/2 bricks of cream cheese 1 cup sugar 1/3 cup heavy cream 1 tbs vanilla extract 2 whole large eggs 3 large egg yolks

  • I change the recipe up a little. I change the crust from graham crackers to Oreo's and then after the cake is done and cooled and plated. I cover the top with a chocolate (chips melted with heavy cream) and then Wether's soft carmels melted with heavy cream and then top with chopped pecans for a "Turtle" cheesecake. Its always the bomb and a big hit at parties, potlucks etc.

  • This is the absolute best tutorial on making cheesecake that I have seen. The only thing I would alternatively do different is (as they do at Junior's) do a spongecake layer for the bottom, rather than the graham crackers. I have a cheesecake sitting in the fridge today that I made last night. NOW I wish I had seen this first!!

  • I tried this cheesecake and it is to die for! I made one change and added a tablespoon of lime juice and some lime peel. I'm totally sold on this and it will definitely become a favorite treat!

  • I used a springform, and wrapped it in tinfoil before putting it in a water bath. You could use a regular one as well, lining it with parchment paper.

  • How you can bake a cheesecake without a spring form is crazy. The part where he flipped it does not work out well. You're safer by removing the sides first so the cake doesn't "drop" from the pan to the plate. If you're worried about leakage from the water bath then put foil around the outside of it. The other bad thing is that overbeating it causes cracks, just mix it enough to blend the flavours. Other then that,the low temp leaving it in for another hour after turning it off & h20 bath,good!

  • Well, he explains why. Spring form pans don't work very well with the hot-bath method, since they tend to leak.

  • Thanks for that, I always thought that cracks were due to the fat content in cakes/cheesecakes etc... So its more to do with over beating the batter... Thanks again.

  • I'm not sure you can over beat cheescake batter since there's no flour in it. Cracks are most likely formed by improper baking methods.

  • Posted my initial comment in the wrong spot, lol. Anyway, you are most likely to get a cracked top by baking incorrectly, not by overbeating.

  • I have an oven thermometer myself as my oven is tempermental. Correct, everybody's oven is different so I usually add or take away baking time. An oven thermometer is a good investment.

  • maybe, for instance, a lot less sugar, and something like spinach, or better yet...salmon. things that go with cream cheese when its not in a cheese cake. use your imagination.

  • Just a head's-up, he VASTLY overestimates the effect of "carry-over heat" 1 hour later and my cheesecake is still cheese-jelly, I'd add around 30 minutes of actual cook time, but it could just be my oven.

  • 250 is a prety low temp for an oven to try and maintain. Unless you have a really good one, it really helps to use an oven thermometer.

  • Towel prevents the hot water from splashing back up at you, also adds a little bit of insulation to the bottom of the pan.
