Actually ... you shouldn't have the B notes in a bluegrass G. So ... fret the B string at the 3rd fret (along with the E) and mute the A string altogether. Starting from the 6th string that gives you a GXDGDG. This gives the chord a distinct modal sound. Also, there really is a lot less of that pick shuffle in the majority of bluegrass rhythm. Otherwise you're on target.

For me bluegrass music has always been about fast but clean picking of any instrument. If you want to know what bluegrass guitar sounds like at its best check out "Nine pound Hammer" by Tony Rice. His two solo's are unbelievably addictive. I'm sure he's chording like this guy on the in between parts but who care's? We want those lighting fast hammer on's and pull off's on the solo.
