Can I ask someone out there what is in soybean paste other then soybeans?They start out green,but when I get a packet in a miso soup kit,the paste is brownish.

I think it's because that the top of the soup is usually fat or 'dirt'? something you don't really want to eat. As you cook or let something linger you'll always see the bad part of it laying at the top :)

Just a warning that foraging plants in NYC parks is illegal and they will ticket you if the police or park workers see you! People still do it but you just have to be somewhat careful.
