They likely didn't take the effort to do so because not so many would notice that it's wrong. And maybe they didn't have any animators that actually know how to play the violin. Hell, it's likely that the staff of Peach-Pit doesn't know, either. Most of the manga art of Ikuto playing his violin was probably drawn using a picture of a real violinist for reference on correct posing.

Actually the name is Tsukiyo no Violinist which means either " Moonlight Violinist" and i am sure it was named that way because ironicaly there is a moon behind ikuto when he is playing BTW Tsukiyo means moonlight or moonlit night
