luk man u need to go first to the game play option and change the weapons cycle to toggle. 2nd when u go and stab an enemy u press R1..after it, b4 ur arm is completely stretched press R2 once to cancel the attack(stabbing faster) and the press it again to bring the knife bak...hope that helped :)..
