His guilt over Pussy's death, his immense fear of AJ ending up like Jackie Jr. in season 3, his obvious love for Meadow-- all of this (and much more) attests to the fact that he is capable of caring deeply about others. And I think he does often subordinate his own interests to his family's. But I do agree that he is also capable of great selfishness.

But he is also loving, guilt ridden, and cares deeply about his children. (The show often suggests that they are one of the main reasons he remains in the mob). Tony's humanity is crucial to the show's appeal. If he were driven only by brute selfishness, it wouldn't be a nuanced show and Tony wouldn't be a complex, conflicted character.

Sociopaths absolutely can feel attachments to loved ones and still detach themselves from their own morales to commit violent acts. It's one of the main themes in season 6 and why Dr. Melfi chose to finally break off their sessions.
