I will soon build my first robot but was already thinking if it was possible i.e. to use an iPhone as central logic unit to do geo location using GPS, image recognition using a camera and use other features of an iPhone including gyro, accelerometer etc.
is it true you communicate with the esc the same way as a servo?

yes, a PWM signal sent from the Arduino controls the ESC.

now you just need to add a wifi web cam and stream it to the iphone and you're set
