JUST an FYI: Putting liquid nitrogen or something frozen in liquid nitrogen in your mouth is relatively safe because somehow the expanding gas from the object protects your mouth from the extreme temperature. SWALLOWING liquid nitrogen, on the other hand, will burn the heck out of your throat and the expanding gasses will burst your digestive tract from your larynx to your pyloric valve. That's one to grow on, kids!

For those curious: Sublimation is when a substance goes from a solid straight to a gas, completely skipping liquid altogether. If you've ever played with dry ice, you know exactly what I'm talking about: gas/vapor that simply comes off the solid piece of dry ice.
The boiling point for those substances that can sublimate tend to be lower/colder than room temperature, which is why it can go from solid to gas. Room temperature is so hot for that substance that it simply turns to gas/vapor.

Yes, Liquid Nitrogen. The reason that it doesn't hurt him, is that the heat capacity of a graham cracker is low enough that very little heat is need to be absorbed from his mouth to raise the temperature of the graham cracker to the 31 deg C of his mouth. If he had placed a chunk of a aluminum of the same size in his mouth that had been chilled in LN2 then he would have hurt himself.
O_o actually, I'll tell you how he did it. He poured some liquid notrogen on graham crackers, which were in the silicon baking pan, and when they were nice and frozen he put them in his mouth. It's kinda like when you put a piece of ice in your mouth on a hot day and breathe out. Only here it's exaggerated by the use of liquid nitrogen. <3 Don't you just love him?
