@airscrew1 I personally do not skim the hot break. This is merely a personal preference as there is no clear evidence that I have seen that it matters either way (though you can ask 3 homebrewers and they'll give you 3 different answers!). Do whatever works for you.
Question. Why do you skim that foam off the top of the wort as you start to boil. You refer to it as the hot break.
