It stemmed from the reputation Sonny had of being a "hot-head" and all the hits he ordered (like Virgil Sollozzo and underboss Bruno Tattaglia).

The style of his execution wasn't just to kill Sonny, but it was to send a message to everyone else.

The kick to Sonny's dead body is just an extra "fuck you asshole".

I had always thougth it was more because of Sonny was the boss of a family and because of the reputation he had already made for himself (which is bad business for any family involved).

Barzini's family was the second most powerful in New York which meant they took the hardest blow to the rackets and businesses that they ran. They had to ambush Sonny because he was simply too smart tactically for the other families, he had learned this back in the 1930's he would never leave the Mall only to see Lucy and that was once a week.
