all ray and shark meat is loaded with uric acid (smell of pee) because their body cannot filter it out and expel it so it collects and saturates the meat. that smell makes it usually unsuitable to eat, unless you put a strong sauce over it. in singapore they put a strong thick spicy chili sauce "sambal" on it more to mask the smell so more like eating chili than fish meat.
the sambal is not to mask away the smell.jus that singaporean like spice and heavy taste.stingray is good for pouching also,dun really have to cover it.

Iron Chefs have more experience catering to what they know the judges are looking for. That goes a long way as to why they are so consistent at winning.

The challenger was a slave to tradition. He was focusing on French cooking, not cooking stingray. They were challenging Sakai's integrity. Combine that with Inoue punching an assistant and you knew they were going down.

I agree. The point of Iron Chef is to show off or highlight an ingredient. So many challengers focus on their own cooking style and dishes and forget to highlight the ingredient. The Iron Chefs make sure the main ingredient is the key player in their dishes.
Honestly, this was a quite difficult ingredient by American standards. I thought it was very close. Sakai did wise to go outside his normal approach of good sauces and complimenting the natural, yet subtle taste of stingray in several ways.
I was worried that Inoue was going to sucker-punch the challenger if he lost. Inoue would make a great pro-wrestling character, he could fight with a "drunken chef" style and whack people with wine bottles when the referee wasn't looking.

as a child, i remember my uncle catching stingrays off the pier in san diego. my aunt would fry the things up and i can remember thinking, "wow, this is awful". i guess that's why these dudes are chefs.

Sakai never loses with fish (at least not in the regular episodes). Never.
He tends to have worse luck with aquatic invertebrates though.
