It really isn't a logic or reasoning issue. There's not less strategy in an RPG there's just different strategy.
It's more an issue of semantics and opposed to reasoning. The reasoning behind gripes about strategy in RPG is sound and valid, but everyone seems to phrase what they're trying to say incorrectly.
Just because every character can learn everything does not mean that they will all be the same at some point. Almost all the characters will have different base stats meaning that the thief that learns everything will still not be able to hit as hard as the fighter that knows everything. I like these games because they allow the characters to become more adaptable; the thief can do more than just steal and the fighter can actually learn to provide support and not just mindlessly attack.
I hate that kind of logic. On paper, it may look like there's less strategy, but it'd still be about the same amount.
Bottom line: Having all characters with the same (potential for) abilities and stats simply gives you more flexibility in assigning their roles in battle. (Like in FFXII and, to an extent, FFX).
The only difference is strategy is that you can pick w/e character you want to perform a certain role in battle.

doesn't that mean there's more strategy? i think that making it so that all the characters have the same potential creates more team possibilities.

one reason I dont like it is because it assumes that the the only desicions the player will make is based around the characters
