I get the connection up to the dog. What I don't get is the cow and horse. Why would you use a cow to catch a dog. And why did she die eating a horse but not by eating a cow???

There is a sort of connection up to the dog but the joke really is that she manages to swallow whole animals of ridiculous sizes (including the cat and dog which are too big to swallow whole) with no problem and survives, and yet she suddenly dies after swallowing a horse which isn't much bigger that the cow .
@joshrobertcassey this is an old nursery rhyme and a very popular one - the traditional version of the song ends with the old lady dying after swallowing a horse - there are some versions that replaces this line with "of course, of course, she swallowed a horse" but the version here is the original song
