Not to undermine your capacity as a chef, but based on my experience this cannot be considered restaurant-quality katsu curry. In Japan, they would stir-fry partially-pureed carrots + capsicum + onion + garlic + ginger AND some extra curry powder in a lot of butter, then add beef stock, tomato puree, and water. This will then be cooked under low heat for at least 40 minutes, and THEN you should add the curry roux (block), apple puree, dark cocoa powder, and simmer it for another 10 minutes.
Great video as usual, I tried the cutlets, but could only find Italian seasoned panko, and had to make my own sauce because of no curry. It was wonderful anyway. Your technique is solid, so I just adjusted as needed. thx Jay, Susie
This might sound weird, but I always feel a little uncomfortable when I go into Asian food stores. I get about 1/3 or my groceries from China town, but I'm always nervous about asking for help or about just sticking out like a sore thumb because I can't read a lot of labels! .. and because I'm not East Asian (half South Asian actually). Maybe I'm just shy.. and paranoid!
Y'know, I have never asked for help in an Asian supermarket and I can't read any of the labels, except some Hiragana. Mostly, I have just been an explorer. lol.
@JoyMac13: I agree! My mom bought me a Henckels chef knife when I went off to college (over 25 years ago!). It's still my most used knife in my kitchen!

I love this! I always get it at the curryhouse in hawaii. Ive made katsu before, and curry, but never both cause it takes too long.

katsu is a loan word shortened from the word, 'cutlet'.

that's right. tonkatsu is the full word for pork cutlet, but katsu is usually the more common word.
